Oil and Fat containing food items are flushed with Nitrogen. Why?

Flushing nitrogen into food packets that include oil and fat-containing substances is mainly done to stop rancidity, which occurs when oil or fat combines with air and produces an undesirable smell and flavour. Therefore, rancidity is avoided by eliminating nitrogen, which creates an environment that is not reactive.
